I’m a salsa snob. I cringe at jarred salsa. I either want this Restaurant Style Salsa or my Pico De Gallo (which I will share with you soon, promise!). Stalking as many food blogs as I do, I’ve seen far too many recipes for salsa. Yes, they look good but it’s hard for me to include strawberries and other random ingredients into a salsa. I like mine “normal”, super fresh and with the perfect salty La Tolteca chip. But the on-sale mangoes I had grabbed at my last grocery run were staring me down one night when I was out of tomatoes and had the most amazing Chicken Guacamole Flautas (coming soon) in the oven.
So, after a quick ‘mango salsa’ search I stumbled upon one of my all-time favs: Gimme Some Oven and her amazing recipe. Since there’s only 5 ingredients, I happened to have them all – score. I hadn’t planned on blogging about this (hence the lack of pics, and good ones at that) but I couldn’t wait to share it with you after tasting so here it is! It paired PERFECTLY with these flautas. So fresh, light and flavorful.
Is anyone else ready for the weekend? Can I get an amen for some chillaxin’ on the couch, sleeping in and a big ol’ glass of wine? I’m so ready. This week felt suuuupa long. Pretty sure I could curl up with a good book, gigantic bag of chips and a big old bowl of mango salsa for the entire weekend. Let’s do it.
- 2 ripe mangoes, peeled, pitted and diced (about 3 cups)
- 1 small red onion, peeled and diced
- 1-2 jalapenos, seeded and diced
- ½ cup chopped fresh cilantro, loosely packed
- juice of one lime
- Combine all ingredients together, toss well and serve. Keeps for up to 3 days in the fridge.
