YOU GUYS. You HAVE to try these!!! They are naturally sweetened, contain NO refined sugar and are delicious! I can’t stop popping them. They are my new craving. My new go-to instead of Thin Mints. Now, let’s not be ridiculous – I’d much rather have a thin mint. Not because these are bad but because I. MISS. SUGAR. But these? These lil amaze-balls (get it?) are taking the place of cookies and I could not be more happy about that. If you follow me on Instagram or FB, you saw my recent recipe FAIL (pic below). Don’t be deceived. I know they’re cute but they were gross. Like spit out the first bite, why did I just waste my time and buy nasty hipster ingredients GROSS. Luckily my cute lil niecey-poo/newest taste tester liked them for some strange reason. (She’s one and hasn’t had much sugar in her life so she doesn’t know any better.) Love ya, Mays.
I know, I know. The nasty ones look cuter than the yummy ones but just TRUST ME! Plus, I’m already working on another batch and will roll these ones in some toasted coconut to up the cuteness factor. I just couldn’t wait to share these with you they are that good. Add peanut butter, oats, honey, toasted unsweetened coconut, chia seeds, vanilla extract, and cocoa powder (I used dark cocoa powder which is why they are so dark in the pictures. If you like dark chocolate, go for the dark! Otherwise, use regular cocoa powder) to a bowl and mix as well as possible. This will be messy but so worth it!
Then stick it in the fridge for 30 minutes to harden up. This will help you roll them into balls. Or you could turn them into bars, whatever you’d prefer! I used a one tablespoon sized scooper and rolled them with my hands. That’s it, you’re done! Keep them in the fridge for up to one week. Mine lasted two days. No joke. I did share them at work in order to determine whether or not they were really blog worthy. I had to make sure my taste buds weren’t playing tricks on me! Mostly I ate them all myself. I’m ok with that. At least it’s not an entire sleeve of thin mints. #beentheredonethat Ok, I’m onto my next non refined sugar snack/dessert attempt. Wish me luck!
- 1 cup oatmeal (dry), I used old fashioned oats
- ½ cup unsweetened coconut, toasted
- ½ cup peanut butter
- ⅓ cup honey
- ¼ cup unsweetened cocoa powder (I used dark, either will work great)
- 1 Tbl chia seeds
- 1 tsp vanilla extract
- Stir all ingredients together in a medium bowl until mixed well. Cover and chill in refrigerator for 30 minutes to make it easier to mold.
- Roll into balls (mine were made using a tablespoon sized scooper) or make bars. Store in an airtight container in the refrigerator for up to one week.
- ** If the mix seems to dry, add in more honey or peanut butter. If it seems to wet, add in more oats.
