Whole30 Day 2. GAH. To be completely 100% real with ya, as I write this I haven’t started yet. I wanted a post to be up and ready for this day since who knows how I’d be feeling! So, future self, I hope you’ve complied so far as it’s only day 2. Yikes, stripes. 28 more to go! Good thing I’ve got this incredibly easy, no prep required, you’ve got the ingredients in your pantry already, Easy Oven Baked Salmon recipe in my back pocket at all times. Seriously, friends this could not be any easier. Plus, it comes out perfect every.single.time.
Grab yourself a big ol’ piece of salmon. I went with one that already had the skin removed. Sometimes I like Crispy Skin Salmon, sometimes I don’t want to deal with standing over the stove. Both are equally up there when it comes to yum factor, I pinky promise. Rub some olive oil into it, sprinkle salt & pepper – YOU ARE DONE! That’s it! Don’t even preheat your oven! Like, on purpose.
Stick it in a COLD oven, turn it to 400 degrees, set your timer for 25 minutes. Take a walk, prep your veggies, clean the bathroom, do a load of laundry, whatever. You’ve got 25 minutes until flaky, juicy, salmon perfection. For real, I’ve made this countless times and it always comes out great! Sometimes I use lemon pepper (also delish) or just squeeze massive amounts of fresh lemon over it when it comes out of the oven. Use what you’ve got.
Simple, quick, no muss, no fuss WHOLE 30 COMPLIANT (can I get a woot! woot!) recipe. After a weekend of planning, prepping, and cooking my booty off I know I’ll be making this salmon over and over the next 28 days. Easy and Whole30 don’t always go hand and hand so I’m stoked to have this one for the harder days that are on their way.
- 2½-3 lbs salmon
- 2 Tablespoons olive oil
- 1 Tablespoon kosher salt
- 2 teaspoons ground black pepper or lemon pepper
- Optional: Fresh lemon slices to squeeze over cooked salmon
- Wax paper or parchment paper (to keep salmon from sticking)
- Lay salmon on top of wax paper or parchment paper on a baking sheet.
- Rub olive oil into salmon.
- Sprinkle with salt and pepper (or lemon pepper).
- Place salmon into a COLD oven (not preheated) and turn to 400 degrees.
- Bake for 25 minutes.
- Squeeze with lemon, if desired and enjoy!
