Crockpot Turkey Pumpkin Chili

Our #1 all-time favorite, even a little healthy, but don't worry it's Ahhhh-MAZING Crockpot Turkey Pumpkin Chili!
Ingredients
  • Non-stick cooking spray
  • 1½ lbs ground turkey
  • ½ tsp olive oil
  • ½ cup onion, chopped
  • 2 cloves garlic, minced (I use my garlic press)
  • 1 tsp chili powder
  • 2 bay leaves
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1 (15 oz can) black beans, rinsed & drained
  • ½ cup pumpkin puree (NOT pumpkin pie filling)
  • 2 jalapenos, diced (remove seeds for less heat)
  • 1½ cups chicken broth
  • Optional Toppings: Sour cream, green onions, cheese, cilantro, avocado
Instructions
  1. Heat a large saute pan over medium-high heat & lightly spray with non-stick cooking spray. Add meat & cook, breaking it up until done about 5 minutes. Add to crockpot.
  2. Add olive oil to saute pan, then onions, jalapenos & garlic. Saute 3-4 minutes, add cumin and saute another minute. Add to crockpot.
  3. Add black beans, pumpkin puree, chicken broth, chili powder, oregano, & bay leaves.
  4. Cover & cook on high for 4 hours or low for 8 hours.
  5. Remove bay leaves, adjust seasoning to taste, add desired toppings & enjoy!
