On Tuesday, you make tacos. The end. I heart Taco Tuesdays. Butttt…. dare I say I’m tired of tacos? I know, I know. You’re disappointed in me. So am I. I’ll redeem myself, promise. This Ground Turkey Taco Salad is a winnnnnnaaaahhhh! Fresh, filling, crunchy, and best of all, covered in ALL the things. Love. And this is comin’ at ya just in time for tomorrow – taco day peeps! Yes, I realize it’s only Monday but let’s pretend this blistering hot Monday is already behind us. (Sorry non-Californian’s, but it’s HOT here!) After a weekend full of heat and sun, I’m in need of a salad. Taco-inspired is always a huge plus. This salad is a product of me thinking of the ground turkey lurking in the back of my freezer that really needed to be used and therefore heading over to Pinterest searching under ‘ground turkey’ and finding this. Yum. I, of course, changed it up quite a bit as is customary in my kitchen and thought it turned out pretty darn good. The hubs who, if you’ll remember, is a big meat and potatoes kinda guy LOVED this salad! He kept stopping between bites and asking if I would make it again. It’s surprisingly filling yet still light and fresh with a little spice. Sold yet? In the words of Nike, just do it.
Speaking of Nike, I’m contemplating a new workout regime. And when I say ‘new’ I don’t mean I’m switching from one regime to another. I mean, I’m a big lazy bones who doesn’t work out AT ALL. I hate it. It’s so weird to me that I used to be a runner in high school and in college took multiple aerobics, fitness, weight training classes for fun. FUN? Who the heck was I? I now loathe all things exercise. In my head I’m still that athletic girl who can sprint 100 meters in 12 seconds but let’s be real. That ain’t happenin’. My mid-30 self needs some fitness inspiration like no other. Someone help. What should I do? Gyms are not and never have been for me. I don’t like ’em, plain & simple. I’ve got a bunch of old workout videos I could break out. I love to be outside. Ughhhh… Am I really doing this? I don’t wanna but I need to. Do you realize bathing suit season is almost here? That is so not ok.
I thought that cutting out sugar would help me in the weight department or at least the feeling better about my body department. Guess what? I’ve compensated by eating literally EVERYTHING in sight except sugar. Pretty sure I’ve actually gained weight and feel worse and STILL crave sugar – what the heck? So, this got me thinking. I need to move. I sit on my booty all day. I used to hike with the Cass (my yorkie) and the hubs all the time. Cass got old and blind and can’t even make it around the block without sitting down and refusing to move so that stopped. Ummm… the dog stops and now so do we? Something’s wrong with this pic. My mid-March resolution? Eat more Ground Turkey Taco Salad and start some sort of workout regime. Someone hold me accountable, k? I don’t do well with this exercise beast. In the meantime, let’s eat.
- 1 lb ground turkey
- ½ medium onion, diced
- 1 red bell pepper, diced
- 1 jalapeno, diced
- 1 Tbl taco seasoning
- 1-2 tsp chili powder (to taste)
- ½ cup chicken broth
- 1 head romaine lettuce, chopped
- ½ cup grape or cherry tomatoes, sliced in half
- 1 bunch green onions, chopped
- 1 avocado, diced
- Sour cream
- ¼ cup ranch dressing
- ¼ cup salsa verde
- In a large skillet, brown ground turkey, onion, red bell pepper, and jalapeno until turkey is no longer pink.
- Add in taco seasoning, chili powder and chicken broth.
- Let simmer for about 5 minutes to let the flavors meld together. Meanwhile, assemble your toppings.
- Divide lettuce onto plates, then top with ground turkey. Let each person choose their favorite toppings to add to their salad.
- For the dressing, mix ranch and salsa verde together and drizzle over the top of your salad.
