These babies are SOOOOO GOOOOOD!!!! I’ve made 4 batches in 2 weeks. That is NOT an exaggeration. I love these Chocolate Peanut Butter Energy Bites but I think I might love these a tad bit more. Maybe? Maybe it’s a tie. I can’t choose. I have to make both all over again. My coworkers all voted for these over the Chocolate Peanut Butter variety so I keep on making these. Just a warning – once you start, you can’t stop. I think I’m only going to eat 2 but then, somehow, 4 are magically gone. And, once I ran out I lost it. 3:00 pm came and my sugar craving was beyond intense, as usual, and I had nothing to help me out! These usually do the trick but I ate them all. I almost caved. When there’s 5 bags of peanut m&m’s in the next room, it makes it that much more difficult for me to abstain.
So it’s been 20 days since I started doing this no refined sugar thing. Don’t worry those beauties above are unsweetened carob chips and not the semi-sweet chocolate chips of my dreams. These are still incredible even with the unsweetened carob. But, I look forward to switching it up for dark or semi-sweet REAL chocolate chips very soon! Yes, I have “cheated” with these ribs. And I am allowing myself natural things like honey, lots of fruit, unsweetened carob chips, etc. But, I’m still over it. I’m beyond ready to be done. The hubs worked a lot last weekend leaving me to my own devices. I almost went out and bought a gallon of mint chocolate chip ice cream. And boxes and boxes of thin mints. And donuts. And cupcakes. And a chocolate milkshake. And fro yo w/ALL the toppings. Actually, I have been to Yogurtland. Even though I am majorly against sugar-free/diet/fake sugar anything, I was having such a bad craving I went anyway and THEY DIDN’T HAVE SUGAR-FREE. Somehow, I walked out. Still not sure how that happened. Should we have cake to celebrate? I really thought this would get easier the longer it went on but, for me, that hasn’t been the case. It’s been a major roller coaster ride and I.HATE.ROLLER.COASTERS.
April cannot come soon enough. In the meantime, I will be making 4,086,236,754 more of these energy bites because they are THAT GOOD. You will love that they are easy to whip up and keep handy in the fridge for munching. Although they won’t last long! - 1 cup oatmeal (dry, old fashioned oats)
- ⅔ cup toasted coconut flakes
- ½ cup peanut butter
- ½ cup ground flax seed
- ½ cup chocolate chips (or use unsweetened carob chips, like I did)
- ⅓ cup honey (or agave nectar)
- 1 Tbl chia seeds
- 1 tsp vanilla extract
- Combine all ingredients well until thoroughly mixed.
- Place in refrigerator for 30 minutes to harden.
- Roll into 1-inch balls (I used a Tablespoon scooper).
- Store in an airtight container for up to one week.
