You GUYS. I just cannot even believe this worked. I was so ready for yet another recipe fail. “Crispy” wings, I’m lookin’ at you. I figured my ego couldn’t handle too much defeat so I kept putting off making this “ice cream.” It’s called perfectionism, and yes I’m dealing with it. BUT – hold the phone – IT WORKED. I am thrilled. I am only upset that I didn’t find this sooner. I could have been enjoying ice cream every single night!! I was totally convinced that my food processor wasn’t up to the challenge or, if it did work by some miracle, it would be gross. Thank the Lord that I was wrong. Thanks to this tutorial, I went in guns blazing and came out a winnah.
The possibilities here are endless, friends. All you need is a frozen banana and a food processor, or if you’ve got a super powerful blender (Vitamix, Blendtec) then give me your address and I’m comin’ over to get it. I mean, you can use that and it’ll work awesomely. And I’m totally jealous of you. Somehow blended banana turns into ice cream? Yes. It happens. Make it, see it, believe it, eat it. I’m drooling. And, oh the mix-ins…. I die. Seriously, you are going to love how the banana turns into soft serve ice cream – or you can let it harden in your freezer for a while – either way, it’s creamy, it’s dreamy, it’s oh-so-yummy.
Let’s talk mix-ins. Now, the banana alone is yum. But, it tastes like, well… frozen banana. Not a bad thing but let’s bump this up to a whole new level. Here are my made-up “ice cream” flavors:
2 bananas, sliced into 1/2 inch coins – frozen – blended until creamy, plus…
Peanut Butter Delight: 1 Tablespoon peanut butter + 1/4 teaspoon vanilla extract + crushed peanuts on top + more peanut butter drizzled on top to take it over the edge
Nutella Dream: 1 Tablespoon nutella (’nuff said)
Sweetened Cinnamon: 1 Tablespoon sweetened condensed milk + 1/4 teaspoon vanilla extract + a pinch of cinnamon (my Mama’s gonna die over this one!)
Dutch Chocolate: 1 Tablespoon cocoa powder
Double Chocolate Coconut Crunch: 1 Tablespoon cocoa powder + 1/4 cup mini chocolate chips + 1/4 cup toasted coconut + more coconut for topping
Banana Chocolate Chip: 1/4 cup mini chocolate chips (or unsweetened carob chips if you wanna be like me)
Strawberries & Cream: 1/2 cup chopped fresh strawberries + 1/2 Tablespoon cream
The sky’s the limit here friends! Go bananas! *Had to* This has got to be one of my favorite finds. I hope you love it as much as I do. The customizability (yes, I realize that is not a word) here is incredible!! And, you can have zero guilt about eating “ice cream.” LOVE. Although, I will say the second lent is over, I’m headed for some Thrifty’s brand mint chocolate chip because, well, I can. Every other night though? This insane banana madness will be happening in my kitchen! Can you come up with a new flavor? Please share!
- 2 large bananas, sliced into ½ inch coins - frozen (overnight is best)
- Any desired mix-ins (see options above)
- Add frozen bananas to food processor or very strong blender. Blend/process until creamy. You will have to scrape it down a couple times.
- Mix-ins: (see ideas above). Add any desired mix-ins after bananas have just started to become quickly. Add them to the food processor or blender and mix well. Work quickly as it will be the consistency of soft-serve ice cream and will start to melt quickly after blended. You can always put it back in the freezer to harden, however, I prefer the soft-serve consistency just after it's blended.
