Unmotivated. That would be me. I’ve never felt this way when it comes to food! Skimming Pinterest has never been so uninteresting. I don’t get it. I check (well, stalk, let’s be real) my fav food blogs and think, ‘Oh, that looks yummy but I don’t wanna cook it.’ Normally I have to keep a running excel doc to keep track of the many recipes I want to try and – if they turn out amazing – share with you. Right now? ZERO inclination to do so. I chalked it all up to my forever long sickness but now I’m on the mend and have a little appetite so… what gives? After consulting a friend and her pointing out to me that I am not living/cooking in my own kitchen, I realized she is so right. DUH. We are living out of suitcases in one room with a mod podge of stuff strewn about. Most of our
junk stuff is safely stored away until move #2 into our actual new place. For now, we’re sharing our germs (SO SORRY MOM!) and space with the parents. They have been kind enough to let us crash for a few weeks and we are so very grateful.
Now that I’m feeling better and my Mama got my sickness, =( I’ve been trying to do my part to feed the fam. Stan the Man (my awesome
stepdad *bonus* dad) and my hubs are big time meat and potato men. They like hearty, simple meals. Spaghetti & meatballs, meatloaf & mashed potatoes, porkchops, the manlier the food – the better. Although I’m forcing myself to make the meals, my heart still isn’t in it so I’ve refrained from blogging about them. Plus, it’s just difficult when you’re not in your own kitchen. It takes double the amount of time to just find a darn strainer or knife or peeler. And then when you do, it’s not YOUR peeler. The one you’ve come to love and adore. That one is packed away in a box somewhere! Enter my unmotivated state.
I had big plans (in my head) for awesome dips and wings and other crazy munchies for your Superbowl party. Cutie patootie Valentine’s desserts to share with your loved ones. All sorts of goodies that just aren’t going to happen. Instead, I’m going to keep it real. Let you know that I just plain don’t feel like cooking right now. Instead, I’m going to search for something to wear to work and probably open a can of soup *GASP* for lunch tomorrow. This Parmesan Lemon Zucchini happened because it’s only 3 ingredients (plus salt & pepper) and none of my beloved kitchen gadgets are a necessity. We needed a veg to eat with our din so I decided to try this recipe from Damn Delicious. Although it was already super simple, I scaled it down a bit more because that’s how I roll right now. Thankfully, the hubs snapped a few pics in case it happened to be blog worthy and after a vote at the kitchen table, the fam has unanimously deemed this dish 100% worthy.
I love the simplicity, very few ingredients and short amount of prep + cook time. A definite repeat in our household fo sho!
- 2 large or 3 medium zucchini, sliced into ½ inch thick rounds
- 2 tablespoons butter
- Zest from 1 lemon
- Juice from ½ lemon (approximately 1 tablespoon)
- ½ teaspoon salt
- ¼ teaspoon fresh ground pepper
- ¼ cup grated parmesan
- Melt butter in a large skillet over medium high heat.
- Add zucchini in one layer along with lemon zest, work in batches if necessary. Cook until golden 1-2 minutes on each side.
- Season with salt and pepper, sprinkle with parmesan cheese and lemon juice. Enjoy!
