Holy smokes the tables have turned! I feel pretty darn good. (I can only hear that in Larry David/Curb Your Enthusiasm voice. If you get the reference, you’re my new bestie) – PRETTY. DARN. GOOD. Tiger blood? Is this it? Have you made your appearance? I do believe so!! No tigers were harmed, stopped stressing people. Whole30 refers to this time as you having ‘tiger blood’ – you feel amazing, energy is at an all-time high, body is changing, etc. Ok, so at the beginning I kept thinking I was imagining it since it’s what I should be feeling like. But people, it’s for real. Tiger blood is HERE!
Monday morning & breakfast, lunch & din are already mostly cooked and ready to go – woot!! Such a fantastic way to start the week. Didn’t even care that there were eggs for brekky. They were YUM. I hate tuna so I was nervous about the tuna-ish lunch but I loved it! And Whole30 ranch? LIFESAVER. Oh, how I missed my ranch and this tastes just.like.it! Came home for din & all I had to do was brown ground beef. I was pretty much winning at life today.
Breakfast: Spinach Frittata, avocado & a plum
Lunch: Protein salad (canned salmon, homemade mayo, celery, green onions, red grapes) over a bed of spinach & topped w/homemade ranch
Dinner: Roasted spaghetti squash, homemade tomato sauce, ground beef
Another victory. Leftovers for breakfast. Out to lunch with my bestie coworker in the whole wide world and stuck to my safety net, shrimp ceviche (minus the tostada). Dinner was made by the hubs and it was awesome. Ended the day with The Bachelorette finale (yes, I know, it’s evil and horrible and I just can’t look away). Spoiler alert: Um, wannabe Ryan Gosling was her pick?! I was shocked! Totally thought she was gonna go for Backstreet Nick and his d-bag ways. I give the relationship a solid 3 months. Honestly, do any of them ever stay together? Ok, ok, back to food…
Breakfast: Leftover spinach frittata & avocado
Lunch: Shrimp ceviche
Dinner: Green slaw, roasted potatoes & grilled chicken w/roasted red pepper sauce
So upset I forgot my scrambled eggs on the counter this morn! The potatoes & mango were delish but strange without any eggs. Out to lunch with my fav boss and stuck with my standard salad. Luckily I remembered to bring along my homemade ranch (like a weirdo) so I could have dressing on it! Dinner was extra yum. Now, here’s the kicker. I got home from work and HAD THE URGE TO EXERCISE. I know. WHAT?! I don’t do that. I don’t even like the word, exercise. This was the day I knew I wasn’t “faking” tiger blood. It was here. And I did it. I exercised. Hold the phone. It happened. Nothing too extreme. Just swam 20 laps, but still. Unprecedented, people.
Breakfast: Leftover roasted potatoes & a mango (I made eggs & forgot them at home!)
Lunch: Greek salad w/homemade ranch
Dinner: Mahi mahi w/avocado & sauteed zucchini & yellow squash
Out to lunch three days in a row and still going strong! Brought along my own dressing again but (plug for my Pop’s store) Plaza Produce is FANTASTIC for Whole30! You can pick and choose exactly what you want at the salad bar + tons of fruit. AND there’s containers of olive oil & balsamic vinegar right there for ya. I brought along ranch but would’ve been stoked with the oil & vinegar! Dinner was unbelievably good and headed for the blog after this Whole30 madness. Ok, now, guess what? I finished dinner, settled in, and again WANTED TO EXERCISE. Whole30 is real. I couldn’t make this up. I headed for the pool and put in 20ish laps (stopped counting around 17)!

Lunch: Salad (from Plaza Produce): Greens, mushrooms, red onions, hard boiled egg, sunflower seeds & homemade ranch (brought it w/me!) & strawberries, watermelon & cantaloupe
Dinner: Pork chops, homemade applesauce & leftover green slaw
After washing my face this morning, I seriously had to look twice in the mirror. I thought my skin was getting clearer but it really showed (at least to me) today. AND I wore a shirt that I was never comfortable in but felt great today. I can’t check the scale but I know my bod is definitely changing. I’ve also noticed that the hubs has def dropped some pounds. My goal wasn’t necessarily to lose weight but to be more healthy and feel better. I can now say 100% I feel SO much better. I don’t remember the last time I felt bloated – which used to be daily – and my energy has increased tremendously. Hubs is currently saying he wants to stay on Whole30 forever. I, however, love the way it makes me feel but don’t want to live without cookies. Or wine. Or cheese. My cravings are nowhere near what they used to be but I did have an incredibly realistic dream about rice last night. Rice?! Who dreams about rice? Apparently, I do.

Dinner: Beef roast (made in the crockpot) and a gigantic salad w/homemade dressing
